This is a great workout for keeping you active at home or on the go, you can also do it once for 15 minutes or repeat it for a longer workout!

Summer Shrimp 
Stir Fry

  • 3 tablespoons of Olive Oil
  • 4 cloves Garlic, minced
  • 12 whole Jumbo Shrimp, Peeled, Deveined, and Tails off
  • 2 whole Zucchini, sliced and diced in chunks
  • 2 ears of Corn, Kernels sliced off
  • 1 large Vidalia Onion, chopped
  • 1/2 cup Grape Tomatoes, Sliced in Half
  • 1 large sweet yellow bellpepper, sliced and diced in chunks
  • Sea Salt and Ground Black Pepper to tase
  • Sweet Basil, garnished for end
Preparation Instructions

Heat 2 tablespoons of Olive Oil in a large skillet over medium heat. Add minced garlic. When oil is hot add shrimp and cook for about 3 minutes until shrimp turn pink. Remove to plate and do not clean skillet.

Add the rest of the oil to the pan over medium heat and place Zucchini in. Cook until they start to turn soft, then scoot them to the outside of the pan, then add the onion and yellow bell pepper. Allow onion and pepper to cook until soft as well, around 5 minutes and scoot those to the edge of the pan. Next throw in the corn and cook for around 2 minutes. Then go ahead and toss in your grape tomatoes, salt, pepper and let that cook together for 1 minute. Lastly, throw your shrimp back in the pan. Stir it all together for 1 minute and turn heat off. Pour onto large platter, sprinkle and with basil and prepare to amaze your family!
